COMO Beach Club Shines a Spotlight on North Bali with the Buleleng Edition of COMO Culinary Odyssey

Bali, Indonesia – COMO Uma Canggu continues its year-long celebration of regional cuisine with the latest chapter of the COMO Culinary Odyssey, this time honouring the rich coastal heritage of Buleleng, North Bali’s cultural and culinary gem.

Presented at COMO Beach Club, the Buleleng Edition of COMO Culinary Odyssey invites guests to explore the rich culinary heritage of North Bali through a thoughtfully curated dining experience by Executive Chef Kadek Sugiantara, COMO Uma Canggu’s Executive Chef. The multi-course menu showcases time-honoured recipes drawn from Buleleng’s coastal villages and family kitchens. Dishes such as Lawar Kenus (grilled squid with toasted coconut salad), Pepes Ikan (fragrant barracuda wrapped in banana leaves), and Serapah Gurita (octopus in smoky turmeric curry) highlight Chef Sugiantara’s deep respect for honest ingredients and the region’s slow, ceremonial way of cooking.

“Buleleng isn’t just a region, it’s a memory of old Bali, where flavours are shaped by the hands of time and the rhythm of the sea. The way people cook, harvest, and share meals here reminds me of my childhood and the values passed down through generations. With this menu, I wanted to honour that spirit – not by replicating the past, but by respectfully reimagining it for today’s table. Every dish and every sip carries a piece of that legacy,” says Chef Sugiantara.

To complement the menu, a trio of signature cocktails: Segara Mekalas, Taman Lovina, and Darma Gula has been crafted using Gwan Gwan Hoo, a legendary arak distilled in Buleleng for generations. Once reserved for village ceremonies and family gatherings, this revered spirit is reimagined with local infusions of tamarind, palm sugar, coconut, and torch ginger. Bold yet refined, each cocktail captures the essence of North Bali’s spiritual and botanical abundance, offering a sip of tradition in every glass.

“The COMO Culinary Odyssey allows us to celebrate Bali beyond its popular narratives,” says Henry Scott, General Manager of COMO Uma Canggu. “By honouring regions like Buleleng, we not only elevate local cuisine but also deepen our guests’ connection to the island and its people.”

The Buleleng Edition is available from June 13th to July 31st 2025 and by pre-order. This chapter forms part of COMO’s commitment to sustainability, cultural storytelling, and destination-driven dining.
