From Tuscany to Dubai: Chef Saverio Sbaragli’s Journey 

Perched on the 27th floor of the iconic Jumeirah Burj Al Arab, Al Muntaha is a Michelin starred fine dining restaurant led by acclaimed Chef Saverio Sbaragli. ‘The Ultimate’ is what the restaurant translates to in English, and this mantra is showcased in all aspects of the restaurant, from expert service to sourcing the finest local ingredients.  

Chef Saverio Sbaragli is dedicated to crafting dishes to create memories to cherish. The experienced chef’s menu has a French base and Italian influences, with playful textures and bold flavours. His dedication to find the best produce and ingredients available in the UAE and his innovative menus have contributed to earning Al Muntaha prestigious accolades including a Michelin star. 

Al Muntaha celebrates regional ingredients that are made possible by the progressive steps achieved in local farming in Dubai. A key ingredient that holds personal significance to the Head Chef is tomatoes. For Sbaragli, tomatoes evoke cherished memories of his childhood in Italy, where his mother would prepare simple yet deeply comforting tomatoes on toast. This nostalgic connection inspired him to create a dish that pays homage to his roots, highlighting the beauty and versatility of this ingredient. Sourcing premium tomatoes from My Farm Dubai, Sbaragli has created a dish that presents the fruit in five distinct ways, each technique designed to enhance its natural flavour.  

This creation not only showcases the depth of locally cultivated produce but also embodies the emotional essence of home-cooked meals, transforming nostalgia into a refined dining experience.
